The Summer Solstice has actually been and gone, so my Dad’s already told me that the nights are drawing in. Technically that’s true, but we’ve still got a lot of sun left to enjoy!
The weather’s been great too, although we have just had a few cooler days, but I’ve had a look at the long-term forecast and it’s all sun, BBQs, and cocktails – hurrah!
Freedom Day might’ve been pushed back to 19 July, but that can’t dampen our spirits…
The Euros are on, football’s still coming home, and we can all see friends and loved ones all summer. It’s going to be a good one!
Sure, there’ll be the odd rainy day, and you might even forget your mask as you pop out to meet friends, but I plan on spending the entire summer celebrating and enjoying life.
And what better way to celebrate than with a cocktail?
Actually, scrap that.
What better way to celebrate AND cool down from the impending heatwave than with frozen cocktails?!
You see, I’m thinking positively, and the heatwave is heading back our way.
We’ll need some ice-cold beverages to keep us all cool in the sun, so I’ve had a think about some of my favourites to enjoy in the sun, with friends, and with a BBQ.
Here are our top frozen cocktails to enjoy this summer…
Oh, by the way, you’ll need ice for all of these – just getting that one in early!
A classic. The most famous frozen cocktail, plus it’s easy to make, a real crowd-pleaser, and it’s pretty damn delicious.
· 50ml tequila
· 25ml triple sec
· 25ml lime juice
· 15ml sugar syrup
· A handful of ice
· Plus a wedge of lime to garnish
Pop all of the ingredients, bar the lime wedge, into the blender and blitz until smooth.
Tip into a cocktail or margarita glass, garnish with the lime wedge and serve.
The perfect drink for a hot summer’s day.
Pimm’s is the ULTIMATE drink for a British summer.
Nothing says summer in the UK more than a BBQ, (occasional) sun, and a glass of Pimm’s.
A Pimm’s slushie elevates it even more, trust me!
Ingredients (Serves four):
· 200ml Pimm’s
· ¼ cucumber, sliced
· 4-6 strawberries, sliced
· 500ml lemon sorbet
· Soda water
· 2 mint sprigs, with leaves picked
Take four large wine glasses and pour 50ml Pimm’s into each. Divide the strawberries and cucumber between the four glasses.
Add two scoops of lemon sorbet to each glass and top up with soda water.
Garnish with mint and serve!
Prepare by leaving the fruit and Pimm’s steeping in the glasses in the fridge for an hour, then taking them out and adding the sorbet, mint, and soda water just before serving.
Frozen Raspberry Sangria
When you think Sangria, you think of Spain, sunny beaches, and glorious weather.
So why not bring that feeling back home?!
Ingredients (Serves six):
· A bottle of sparkling rosé or sparkling red wine
· Raspberries – a few to garnish
· 6 scoops of raspberry sorbet
· 6 strips of orange zest
This one doesn’t even need ice!
Add orange zest to six Champagne flutes, add the raspberry sorbet, raspberries and top up with the sparkling red wine or sparkling rosé.
However you celebrate the summer, celebrate in style. For me, that’s with a frozen cocktail.
